Steps to make Tomato coconut chutney:
- Chop onions and tomatoes roughly.
- Heat a pan. Add 2 tsp oil.
- Fry urad dal, channa dal and red chilli. Once the dals turn light brown, take it out into a mixie jar.
- In the same pan, fry onions and garlic till the onions turn light pink.
- Add tomatoes and required salt. Fry until tomatoes soften nicely.
- Add tamarind and coconut and mix well for 2 min.
- Let the mixture cool down completely.
- Dry grind the mixie jar with the roasted dals+chilli.
- Add the onions+tomatoes mixture and grind to a thick chutney without adding water.
- Take the chutney into a bowl.
- Heat a pan. Add 1 tsp oil.
- Fry mustard till it splutters. Add curry leaves.
- Add the ground chutney and saute for 2-3 minutes.
- Take it out into a serving bowl.
- Serve with idlis, dosas or oothappams..
